I will be starting a Master of Public Administration program in Environmental Science & Policy at Columbia in just a couple of weeks, and this is actually my last day of work.<div>

This tour, and transportation back and forth from Grounds, was provided free of charge to students thanks to UVa Dining. <br />

I have visited Monticello a number of times at this point but yesterday was able to take in the grounds with new eyes - and realize that nothing was accidental or out of place - as Gabriele Rausse, our delightful tour guide and Associate Director of Gardens and Grounds at Monticello, pointed out various flora and fauna around the house.<br />
<br />
Thanks to Gabriele's expertise, we learned that a huge hollow tree trunk was actually a secret storage chamber for moonshine in the early part of last century; that the placement and shape of the garden beds on the West Lawn actually represented Jefferson's embracing of a new, less rigid and structured kind of garden than had been the convention; that the grove of trees beyond his first roundabout was actually intentionally maintained on the north slope of the mountain in order to provide a cool respite from summer's heat and humidity; and that the beautiful and stately trees bordering the vegetable garden were actually maple trees purchased from a Long Island nursery in the hopes that they would produce sugar in a less labor-intensive way than what was required at the time.<br />
<br />
Thomas Jefferson cultivated an incredible amount of edible and non-edible plants, and they all seem to have brought him joy and pleasure throughout his life. I particularly like the fact that he used the plant world as a way to understand and explore the natural environment around him, as evidenced by his tendency to collect plants on his travels (his greenhouse contained lemon trees from Italy, for example) and his meticulous notes about gardening at Monticello.<br />

Hydration Stations.</strong> The StudCo Student Life committee is exploring the possibilities of expanding the number of water bottle filling stations on Grounds (there are currently two: one at the Pav and one outside of Crossroads). Each <span class="il" style="background-attachment: initial; background-clip: initial; background-color: #ffffcc; background-image: initial; background-origin: initial;">dining</span> hall is promoting the MyPlate program through international cuisine this month.</div>

Food Waste Audits.</strong> <span class="il" style="background-attachment: initial; background-clip: initial; background-color: #ffffcc; background-image: initial; background-origin: initial;">Green</span> <span class="il" style="background-attachment: initial; background-clip: initial; background-color: #ffffcc; background-image: initial; background-origin: initial;">Dining</span> and various student groups have organized food waste audits spanning from Spring '06 to this past fall. <span class="il" style="background-attachment: initial; background-clip: initial; background-color: #ffffcc; background-image: initial; background-origin: initial;">Dining</span>'s sustainability intern compiled the data from these audits to discover that over the years, there has been a steady downward trend in waste per student! Trayless <span class="il" style="background-attachment: initial; background-clip: initial; background-color: #ffffcc; background-image: initial; background-origin: initial;">dining</span> and composting are two UVa programs that have directly and tangentially come about as a result of the findings of some of the earlier food waste audits -- audits are a valuable tool for evaluating waste mitigation opportunities, and we will be conducting more this spring (stay tuned!). Dining launched its <a href="http://www.campusdish.com/en-US/CSMA/Virginia/Sustainability/NewActions.htm">reusable mug punch card program</a> in October of 2009 (to coincide with <a href="http://www.scup.org/page/csdDONOTUSE">Campus Sustainability Day</a>) and it's been a popular program ever since. Our cafes collect the completed cards and return them to the Dining Admin Office in order to keep track of landfill diversion.<br />
<br />
As of now, since fall 2009, Dining has received 527 fully completed punch cards! With 10 instances of reusable mug usage per card, that means that together we've all diverted at least <strong>5270 disposable cups</strong> from the landfill!<br />
<br />
That doesn't include the cards that students are still working their way through, or the reusable mugs that have been used for a discount in place of a card punch. I think that collectively UVa could probably aim to get about 75 of those punch cards completed by the end of the semester to bring up our diversion count to over 6000 cups! That's right: the tofu you see daily at the salad bar or in any number of dishes in the dining halls - even the tofu available at Burrito Theory in the Pav - is all locally manufactured. All three residential dining rooms will be sampling Twin Oaks herbed tofu and serving a tofu-based entree at their Vegetarian station tomorrow evening. O'Hill promises to be a special treat as representatives from Twin Oaks will be on hand to help with the sampling and answer any questions you might have about tofu.</div>

1. Register for the program with a cashier at any participating location* and pay your refundable $5 cash deposit.<br />
2. Receive two program key tags.<br />
3. Exchange a key tag for a clean reusable to-go container.<br />
4. Bring back your used container to any participating location* and either<br />
a) get a clean container for your next take-out meal, or<br />
b) get a key tag if you're not getting to-go immediately.<br />

RecycleMania.</strong> It's that time of the year again - RecycleMania gets underway this coming week and UVa is competing against other schools around the country for bragging rights about our recycling efforts! <strong>2. Virginia Food Security Summit.</strong> The Food Security Summit in December was a success. The main focus of the event was to review and informally launch the Virginia Farm To Table plan, which is currently offline as it moves from draft to final phase. <strong>3. Meat Free Monday station.</strong> Dining has introduced a new set of dishes at the Newcomb, Runk, and O'Hill Meat Free Monday stations. Try out such yummy dishes over the coming weeks as Spinach & Chickpea Curry over Roasted Sweet Potatoes, Falafel Pita Wrap, and Apple & Butternut Squash soup! <br />

This promises to be an excellent opportunity to learn about food systems on a global and local level, and to apply some of that knowledge back in our own community, and possibly even right on the farm. (Last year, students enrolled in the Summer Institute food course were required to put in eight hours of volunteer work at either the Morven Kitchen Garden or the UVa Community Garden on Grounds, and they had a great time fulfilling that obligation.)<br />

Global Sustainability minor) has long focused on semester-long projects to connect the dots between what the students are learning via powerpoint in the classroom and what is happening in our community.
